Wow Wow Wubbzy cupcakes

I made these cupcakes for my neice's birthday. They were also made to be milk and egg free to accomodate my son's food allergies.

Easy Wow Wow Wubbzy Cupcakes

Ingredients:

1 milk and egg free yellow cake mix (I use Duncan Hines)

12 oz. club soda or any flavor soda you like (lemon lime, cream soda work well too)


Preheat oven according to package directions. Use cupcake liners in a muffin tin.

In a medium size bowl add cake mix and soda. Using a hand mixer blend on medium speed for 2 minutes or until smooth, don't over mix.

Fill cupcake liners 2/3 full. Bake in preheated oven for time noted on package for cupcakes. I bake mine about 20 minutes. Test for doneness using a toothpick, if it comes out clean the cake is done if not bake a little longer.

Remove from oven, cool on rack completely before frosting.

Frost as desired. I use a homemade buttercream recipe but some packaged frostings are also great to use in a time pinch. I colored the frosting with Wilton violet gel food coloring. To decorate I piped frosting used the Wilton 1M tip with purple icing, then placed Wubbzy rings and sprinkles on top.

The cupcakes can also be frozen with or without frosting (I prefer without) if you make them ahead of time.
