Easy Butterfly Cake

The best ting about the butterfly cake is that it only requires you to bake one round butter cake, and the rest is easy.

For the butter cake simply cream 125g butter with 3/4 cup castor (fine) sugar, mix in 2 eggs, 1 tsp vanilla essence. Once smooth sift in 2 cups SR flour and 1/2 cup milk.

For the butterfly cake you need to bake it in a lined or sprayed round cake tin for about 45mins at 180C (modertae oven).

Once the cake has cooled, use the following stencil to cut out the butterfly pieces. The smallest piece is the butterfly's body, with the other two forming the wings.



I used cream cheese icing because my kids love it.
Beat together 100g cream cheese and 3/4 cup sifted icing sugar. Once smooth, add 1 tsp lemon juice and the same of finely grated lemon rind. If icing is too thick add a splash of milk.

Then you just need to choose the colour for your icing and grab some lollies, and licorice to decorate.
